Roasting

Firehouse Coffee Company chooses premium arabica coffee, also known as Gourmet specialty coffee, from around the world. Roasting of the coffee is a critical step in developing the individual origin's specific flavor and aroma characteristics. The coffee beans are placed in a drum roaster and are tended constantly by a knowledgeable roaster who takes into account the many variables that affect the coffee beans. Supervising the roast by monitoring time, temperature, appearance, smell, and sound is essential. This special care maintains subtleties in taste that can be lost in the process. Following roasting, each coffee is skillfully “cupped.”
 


 


Cupping

“Cupping” is the process of sampling the coffee to ensure a level of consistency and quality. The first process of cupping is the fragrance evaluation of dry grounds. Water is poured directly over a small amount of coarse grounds and is then steeped for a few minutes. The cupper uses a silver spoon to break the crown/crust to inhale the aroma. (A coffee stained nose shows close proximity to the process!) Aroma is an indication of potential taste sensations to come. The cupper loudly slurps the coffee, which mixes air over the palate to cover the taste buds. Every batch of coffee is cupped for consistency and quality before being sealed in a one-way valve bag. Optimum freshness remains when coffee is consumed within a month of roasting.
 


 


Blending

The quest for the perfect blend begins after Firehouse Coffee Company's roasters and cuppers determine the origin's unique flavor characteristics. Blends are developed and created by mixing beans from different origins, then cupping and adjusting portions to balance flavors and strengths. This process allows Firehouse Coffee Company to create a perfect blend and distinctive cup of coffee. However, many of the origins are “stand alone coffees” and are renown for their unique individual taste. Firehouse Coffee Company takes pride in craftsmanship and the commitment to deliver a superior product.
